Slice open the sausages.
Place a pot over medium to high heat and sauté them in olive oil, adding the onion, carrot and chili.
Add the rice, tomato juice, the vinegar, and simmer for approximately 15 minutes.
When cooked, remove from heat and add the herbs.
Core the peppers but leave them whole and stuff them by adding the filling in the center.
Preheat the oven to 180°C and bake for 45-50 minutes.
