Soak the mushrooms in lukewarm water.
Place a pot over medium to high heat and simmer the leek in water with sugar and salt until it softens.
Place another saucepan over medium to high heat and melt half the butter and sauté the leek and rice.
Add the mushrooms and the cognac, then slowly add the mushroom water.
Simmer the mixture for about 20 minutes.
When ready, remove from heat and finish with the remaining butter and grated Graviera cheese.
