A very aromatic and filling soup, common across the Middle East.
The Japonica Rice will make it really shine!
INGREDIENTS (for 30 pieces)
In a bowl, mix the ground beef with the rice and the rest of the ingredients, i.e. the onion, eggs, breadcrumbs, cumin, coriander, salt and pepper.
Mix thoroughly until all of the ingredients are completely combined.
Add the meatballs to boiling water and simmer for about 25 minutes.
Keep the broth.
Place a pot over medium to high heat and sauté the cardamom, spinach, all-purpose flour and green onion in olive oil and then add the broth set aside in the previous step.
Blend the soup to a velvety consistency and add the meatballs.
Serve in a deep dish with a spoonful of yogurt.
