
Stuffed peppers with rice and beef sausage

Stuffed Calamari
February 23, 2023A very aromatic and filling soup, common across the Middle East.
The Japonica Rice will make it really shine!
INGREDIENTS (for 30 pieces)
- 200g Japonica Rice
- 1kg Ground Beef
- 50g Coriander
- 150g Red Onion, finely chopped
- Salt
- Pepper
- 1/2 tsp Cumin
- 2 Eggs
- 50g Olive Oil
- 30g Breadcrumbs
- 400g Fresh Cardamom
- 1kg Spinach
- Juice of 3 Lemons
- 200g All-purpose Flour
- 200g Green Onion
METHOD
In a bowl, mix the ground beef with the rice and the rest of the ingredients, i.e. the onion, eggs, breadcrumbs, cumin, coriander, salt and pepper.
Mix thoroughly until all of the ingredients are completely combined.
Add the meatballs to boiling water and simmer for about 25 minutes.
Keep the broth.
Place a pot over medium to high heat and sauté the cardamom, spinach, all-purpose flour and green onion in olive oil and then add the broth set aside in the previous step.
Blend the soup to a velvety consistency and add the meatballs.
Serve in a deep dish with a spoonful of yogurt.
